I found this recipe on pinterest and so I decided to give it a shot. I always thought that making your own caramel popcorn would be really tough but it turns out that it isn’t! It does require you to babysit it (needs to be stirred every 15 minutes) but it is well worth the time you spend on it! This popcorn is a great snack for hungry boys! We like to take a few batches when we go on a long car trip (It’s usually gone within an hour though)! Hope you all enjoy it as much as we do!
“I don’t even like caramel popcorn but I can’t stop eating it!” Nathan (age 16)
1 cup butter
2 cups light brown sugar
½ cup corn syrup
1 teaspoon salt
½ teaspoon baking soda
1 teaspoon vanilla extract
5 quarts popped popcorn
Preheat oven to 250 degrees F. Place popcorn in a very large bowl.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour over popcorn, stirring to coat.
Place caramel popcorn in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely then break into pieces*
*I like to keep stirring it while it cools- otherwise it’s hard to break the pieces up! 🙂
